1.5 litres of vegetable stock (can be made out of stock cubes)
1 small bag of frozen peas
1 onion
Black pepper
Salt
6 to 10 mint leaves (If you don't have mint leaves, try using some mint sauce at the end of cooking the soup. Add few teaspoons one by one checking the taste each time)
Chop the onion, add a little oil to a large pot and fry the onion off for a couple of minutes. Add the vegetable stock and bring to the boil. When it is boiling, add in the frozen peas. Chop the mint leaves and add along with black pepper and salt to season. When the soup comes to the boil again, lower the heat and simmer for 5 minutes. Allow to cool slightly and then blend using a hand blender - if you don't have a hand blender, use a jug blender.
Serve with brown bread, butter or whatever else you fancy!
Very simple soup and loaded with vitamins.
